This recipe for rice milk calls for fragrant jasmine rice, but any rice at all can be used. You can use brown rice for better nutritional value. Results are smooth, creamy, and lightly sweetened. A nice alternative for dairy milk.

Recipe Ingredients for Rice Milk

0.5 cup uncooked Jasmine Rice
1 serving Clover Honey
4 cup (8 fl oz) Water
0.5 tsp Vanilla Extract

Recipe Directions for Rice Milk

  1. Cook a half cup of rice according to package directions. I prefer using a rice cooker for the sake of simplicity. Should yield about a cup of cooked rice.

  2. Combine the cooked rice in a blender with 4 cups of water, 1/2 tsp vanilla extract, and 1 tbsp of honey. Other sweeteners may be used if preferred.

  3. Blend on highest setting for 2-3 minutes straight, or until resulting liquid is thoroughly white and grains are no longer present.

  4. *Optional step* Resulting liquid may be strained through a fine strainer and/or cheesecloth to ensure no rice pieces remain. I tend to skip this step. I just shake or stir my milk up before drinking!

  5. Enjoy! May be used the same way as dairy milk. For storage, a glass mason jar with a lid works best for me. Otherwise, the rice milk could pick up refrigerator funk. Lasts a week, but I've not tried my luck any longer than that.
