An unusual pilaf in which the rice is cooked for quite a while before adding the seasonings.

Recipe Ingredients for Rice/ Mexican Style

3 tablespoons olive oil
1 1/2 cups rice
1 medium onion, minced
1 tablespoon minced garlic
3 cups chicken broth

Recipe Directions for Rice/ Mexican Style

  1. Place the oil in a large, deep skillet which can later be covered and turn the heat to medium. A minute later, add the rice and cook, stirring almost constantly, for 5 to 10 minutes, until it begins to change color but not to brown.

  2. Add the minced onion and garlic and stir for 30 seconds. Season well.

  3. Add the liquid, stir, cover, and turn the heat to low. Cook for 20 minutes, then check the rice. When the rice is tender and the liquid is almost entirely absorbed, turn off the heat and let rest for 10 to 30 minutes before serving.
