Recipe Ingredients for Rice & Lentils w/ Vegetables

1 cup lentils
1 cup rice
4 cups stock
1 tbsp olive oil
1 clove garlic, minced
1 cup frozen peas
1 cup frozen corn

Recipe Directions for Rice & Lentils w/ Vegetables

  1. In a medium saucepan brown garlic in oil. Add stock, rice & lentils to pot, bring to a boil, lower heat to med-low and simmer for 30-35minutes or until the liquid is absorbed.

  2. In a separate pot cook the peas and corn (or whatever other types of fresh or frozen vegetables you want to use) and serve with the rice & lentils.
