Brown Rice and Lentils, combined to make a complete protein. Recipe yields 2 cups each, for a total of 4 cups when combined. (8 -1/2 cup servings COOKED.) Can be eaten as-is, with butter, diet butter, and/or soy sauce, or combined with any number of foods to make many different meals. Recipe Ingredients for Rice & Lentils

0.67 cup Brown Rice
140 Lentils

Recipe Directions for Rice & Lentils

  1. Measure 2 cups water.

  2. Bring to a boil in saucepan with tight fitting lid.

  3. Measure 2/3 cup dry rice.

  4. Add rice to saucepan, reduce heat, and simmer for about 45 minutes or until water is absorbed.

  5. Meanwhile measure 1 cup dry lentils, sort and rinse well. Place in medium to large saucepan.

  6. Cover lentils with at 3 1/2 cups hot water. Bring to boil, then reduce heat and simmer with lid tilted, about 15-20 minutes, or until desired tenderness is reached.

  7. Carefully drain lentils, and let cool, then place in bowl bowl or storage container large enough to hold at least 4 cups (1 quart) with space left over to allow stirring.

  8. When rice is done, remove from heat, fluff with fork, let cool slightly, then add to lentils. Mix well. Can be stored in refrigerator for up to 5 days
