Very filling salad that can be made with any leftover veggies - with a vinagrette dressing

Recipe Ingredients for Rice and Lentil Veggie Salad

9 cups brown rice, cooked
2 cups lentils, cooked
1 large onion, diced
2 red peppers, diced
6 cups green beans, cut
3/4 cup olive oil
1/2 cup white balsamic vinegar
1/4 cup lemon juice
1 tbsp salt
1/4 tsp cayenne pepper

Recipe Directions for Rice and Lentil Veggie Salad

  1. Cook rice according to package directions

  2. Cook lentils

  3. Chop raw veggies

  4. Cook frozen green beans (I use TJ's french beans)

  5. Mix dressing ingredients.

  6. Mix all ingredients together.

  7. Keeps for a week. May need to add various vinagrette ingredients as the week unfolds.
