It's Crock Pot Time! 13 oz serving size! And the rest should freeze well - so says the interweb... In hindsight, I should have used beef stock/bouillon - it gives a better flavor. Too much water rather than stock - the amount was perfect, the rice and lentils got all big and squishy, but the flavor wasn't quite right. Ended up adding the last 3 ingredients in the end to try to save the flavorless mess that was the stew. With enough of the last 3 ingredients - and some salt, pepper and garlic, it's delicious.. Plus, you get to eat 13 oz of it for only 150 calories!?!

Recipe Ingredients for Rice & Lentil Stew

1 cup Dry Lentils
1 cup Dry Brown Rice
4 cups Carrots
1 cup Red Onion
3 tsp Fresh Garlic
28 oz Diced Tomatoes
12 oz Frozen Peas
2 cups Green Pepper
6 oz Tomato Paste
96 oz Water
8 Chicken Bouillon Cubes
2 cups Tomato Juice
3 tsp Beef Bouillon
10 g Onion Soup Mix pack

Recipe Directions for Rice & Lentil Stew

  1. Dump everything into your crock - add enough water to cover veggies plus a good 4 cups extra or so, for the rice suckage effect.

  2. Hopefully, will turn out divine after 4-6 hours on high.
