Recipe Ingredients for Rice and Lentil Salad

2 tablespoons extra-virgin olive oil
2 tbsp balsamic vinegar
1 tbsp finely chopped shallot
1 tbsp Dijon mustard
1/2 tsp paprika, smoked
1/4 tsp salt
1/4 tsp black pepper
2 cups brown rice, cooked
15 ounce lentils, rinsed
1 carrot, diced
2 tbsp cilantro, chopped

Recipe Directions for Rice and Lentil Salad

  1. Whisk oil, vinegar, shallot, mustard, paprika, salt and pepper in a large bowl.

  2. Add rice, lentils, carrot and parsley.

  3. Stir to combine

  4. Best if chilled at least 2 hours
