A cool and delicious salad. For one it's meal, for two it would be a nice side dish.

Recipe Ingredients for Rice and Lentil Salad

1/2 cup brown rice
1/4 cup lentils
1/2 cucumber
1/4 cup diced tomatoes
1/4 cup plain yogurt
2 T lemon juice
1 clove garlic
1 tsp oregano
1/4 tsp black pepper
1/2 tsp salt

Recipe Directions for Rice and Lentil Salad

  1. cook the rice and lentils according to directions, and then cool. Combine cooled lentils and rice in a medium bowl.

  2. Dice the garlic, cucumber and tomato. Add to the rice mix.

  3. Combine the rest of the ingredients and toss to coat. This salad can be eaten right away but is even better a couple hours later.
