Asafetida flavored fried 'crackers"

Recipe Ingredients for Rice Lentil Crackers

1 cup Rice Flour, White
0.13 cup Red Lentils
3 tbsp Oil Olive Extra Virgin
1 tsp Chili Powder
2 dash Salt, Table

Recipe Directions for Rice Lentil Crackers

  1. Soak a tablespoon and a half of red lentils (rinsed) in a small dish of water for 30 minutes.

  2. Mix rice flour, chili powder, dash of salt and a 1/2 t of asafetida powder in separate small mixing bowl. Add 1 cup boiling water and mix well. Add more water slowly if needed to moisten all of flour. Let sit and cool.

  3. Heat 1" of cooking oil in small skillet over medium-high heat.

  4. Drain lentils and add to cooled rice flour mixture. Using a sheet of plastic cut from plastic bag, flatten 1" balls of dough - about 4 at a time on a small plate. Use palm of hand

  5. to smash to about 1/4" thickness. Prick with fork 2-3 times (to prevent puffing).

  6. Peel each one from plastic and place in hot oil. Cook until browned on one side and then turn. Drain on paper towels. Serve with plain yogurt.
