Recipe Ingredients for Rice with Dates and Almonds (Surprise Rice)

2 cups white rice
3/4 cup almonds
4 tablespoons butter or olive oil
1/2 cup raisins (optional)
1/4 pound dates

Recipe Directions for Rice with Dates and Almonds (Surprise Rice)

  1. Boil rice till not quite done.

  2. Fry almonds in 2-3 tbsp butter/oil until just golden.

  3. Add raisins and dates, stir gently over moderate hear for a few minutes longer.

  4. Add about 1/2 cup water and simmer gently 15 minutes until the dates are soft and the water absorbed.

  5. Melt 1 tbsp butter/olive oil in heavy saucepan.

  6. Add half the rice, and spread the date almond mixure evenly over it.

  7. Cover with remaining rice and sprinkle with olive oil or dot with butter.

  8. Cover with a clean cloth and a tight-fitting lid, and steam over very low heat for 30 minutes.
