Recipe Ingredients for Rice and Chickpea Pilaf with Pine Nuts

1 large Onions
3 tbsp Olive Oil
0.5 cup Pine Nuts, Pignolia, Dried
1 tsp Allspice, Ground
1 cup Rice, White, Long-grain, Regular
3 tbsp Dill Weed, Dried
3 cup (8 fl oz) Water
15 oz Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds

Recipe Directions for Rice and Chickpea Pilaf with Pine Nuts

Put the onion ina wide saucepan with the oil, pine nuts and allspice. Cook over medium heat until the onion is soft, 6-8 minutes. Add the rice, currants, and herbs and cook for a few minutes more. Season with 1/2 t salt and a little pepper, then add the water and the lemon juice. Bring to a boil. Cover the pan, reduce heat to low, and cook until the liquid is absorbed and the rice is tender, 18-20 minutes. Toss gently with the chickpeas, cover, and let stand for 10 minutes.
