Use leftover rice (1 cup) and any vegetables on hand.

Recipe Ingredients for Rice Cakes

1 clove garlic
2 tbsp onion
1 carrot
2 tbsp green pepper
1 tsp rosemary
1/8 tsp salt
1/8 tsp pepper
1/4 cup brown rice
1 tbsp olive oil
1 g asiago cheese
2 tbsp flour

Recipe Directions for Rice Cakes

  1. Dice or grate veggies.

  2. Mix all ingredients together adding enough flour to bind.

  3. On a floured surface, pat into small patties. Lightly flour the tops.

  4. Fry 5 to 7 minutes on each side.
