Recipe Ingredients for Rice Bowl

1 cup brown rice
14 ounce can black beans, rinsed and drained
1 cup grated cheddar cheese
1 cup black olives
1/4 cup chopped cilantro
1/2 cup plain yogurt
1 cup salsa
1 cup steamed broccoli
2 stalks celery
2 tablespoon lemon juice

Recipe Directions for Rice Bowl

  1. Cook rice according to package directions--yields two cups cooked.

  2. Rinse and drain the beans.

  3. grate cheese, slice olives, chop cilantro

  4. Fill individual bowls with rice and beans, top with choice of toppings to suit your taste.
