A totally satisfying lunch! No afternoon slump! I usually make this with light feta cheese, but the C-C recipe analyzer couldn't find it in the database (?).

Recipe Ingredients for Rice, black bean, and corn salad

2 cups brown rice
1 cup black beans
1 cup corn kernels
3/4 cup feta cheese
1/2 cup lemon juice
2 tbsp olive oil

Recipe Directions for Rice, black bean, and corn salad

  1. Mix rice, beans, corn and feta cheese.

  2. Mix lemon juice with olive oil well. Add to rice mixture.

  3. **Optional** --> add seeded and diced tomato/cucumber/peppers; green onions; ...

  4. Season with salt and pepper. Let sit overnight for flavours to 'blend'.

  5. Serves well cold, or just warmed to take the chill off. Goes over wonderfully @ BBQs!
