Recipe Ingredients for Rice and Beans, Mexican

2 cups chicken broth
1/4 teaspoon salt
3 tsp,+crumbled bay leaves
1 cups Brown Rice
1/8 pound bacon, chopped [four slices]
3/4 cup diced sweet onion
1/2 cup red or green pepper, diced
15 ounce Corn, Sweet, Yellow
1/2 cup picante sauce
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 T garlic cloves, chopped
1/2 cup chopped fresh cilantro
15 ounce Pinto Beans Canned

Recipe Directions for Rice and Beans, Mexican

  1. Chicken broth, bay leaf and salt in a medium saucepan, and bring to a boil. Stir in the rice. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Discard the bay leaves. Set rice aside.

  2. Cook bacon until crisp. Then add ingredients through the garlic on the ingredients list. Sauté 5 minutes or until onions are tender.

  3. Add rice, cilantro, and beans, and cook 3 minutes or until thoroughly heated, stirring occasionally. Okay to add more chicken broth if too dry.

  4. Okay to thicken with a little cornstarch and water.

  5. Serve with Tangy Tamarind Sauce or Pickapeppa sauce.
