Rice, beans, and whatever I have leftover ... chicken, carrots, and peas in this case.

Recipe Ingredients for Rice and beans w/ leftovers

1 tbsp olive oil
1/3 cup onion, chopped
1 tsp garlic
1/3 cup celery, chopped
1/4 cup carrot, chopped
1/4 cup peas, frozen
3 oz chicken, diced
4 oz pinto beans
3/4 cup rice
1 cup chicken broth
1 1/2 cup water
1 tsp salt
1 pepper to taste
1/4 tsp paprika
1/4 tsp red pepper flakes

Recipe Directions for Rice and beans w/ leftovers

  1. Heat olive oil in large pan. Add onion, celery, and garlic and heat for 2-3 minutes.

  2. Add chicken and brown quickly for 1-2 minutes.

  3. Add rice (uncooked) into pan and stir and heat for 1-2 minutes.

  4. Add chicken broth and water. Stir and then add carrots, peas, pinto beans and spices.

  5. Bring to a full boil and then reduce heat to low and cover. Let simmer until rice is cooked through.
