Recipe Ingredients for Rice and Bean Filling

1 cup celery, diced
1 (medium) zucchini, diced
1 cup brown rice, cooked
1 cup mushrooms, sliced
15 ounce pinto beans
2 tablespoons olive oil

Recipe Directions for Rice and Bean Filling

  1. Sauté all ingredients together until heated through.

  2. Heat low-carb tortilla in microwave for 15 seconds.

  3. Put approximately 1/6th of the filling into tortilla and wrap.

  4. *The oil is mixed with various spices as a dressing. It's optional.
