Recipe Ingredients for Rice and Bean Bowl

2 servings, cooked brown basmati rice
3 1/2 servings (1 can) fat free refried beans
2 medium zucchini, diced
8 oz sliced mushrooms
1 pt grape tomatoes
4 oz fresh baby spinach
1 green pepper
1/2 tsp cumin
1/2 tsp dried basil
1/2 tsp garlic powder
1 cup low sodium chicken broth
1 salt and pepper to taste
1 package firm lite tofu, cut into slices, baked in broth, salt and pepper in the oven (at 350 degrees for 20 minutes, flip 1/2way)

Recipe Directions for Rice and Bean Bowl

  1. Cook zucchini, mushrooms, tomatoes, spinach and spices in 1/2 cup vegetable broth until cooked through, stirring frequently.

  2. Heat up refried beans in microwave (1 minute, stir, the heat for 1 more minute).

  3. Take a bowl and layer in the following order: 1/4-1/2 cup brown rice, 1 large scoop refried beans, tofu, veggies.
