Rice, chicken & veggies made into mini-balls

Recipe Ingredients for Rice Balls

1/2 cup brown rice, short grain
3 tsp Olive Oil
1/4 lb chicken breast
1 1/4 tsp salt
1/8 tsp pepper
4 oz. sweet potato puree
2 oz. cheddar cheese, reduced fat
1/4 cup buttermilk, lowfat
1 egg, beaten
1/2 cup spinach puree
1 1/2 cup bread crumbs

Recipe Directions for Rice Balls

  1. Place the rice in a small saucepan with 1 cup of water; cover and bring to a boil.

  2. Reduct heat to very low and cook until rice is tender, 30-40 minutes. You can also use rice steamer.

  3. Coat a large nonstick skillet with cooking spray and set it over medium-high heat. When pan is hot, add oil.

  4. Sprinkle chicken with 1/4 tsp. of salt and pepper and cook until no longer pink, 4-5 minutes on each side.

  5. Cut chicken into chunks and place into a food processor or blender.

  6. Add sweet potato puree, cheese, 1 tsp salt and buttermilk.

  7. Blend until smooth.

  8. Transfer mixture to large bowl and stir in cooked rice.

  9. Roll mixture into 1-inch balls and place on sheet of wax paper or aluminum foil.

  10. In a shallow bowl, beat egg and vegetable puree with fork.

  11. One at a time, dip balls in egg mixture, and then roll in crumbs to make an even coating.

  12. Coat large non-stick skillet with cooking spray, set over medium-high heat. When pan is hot, add remaining 2 tsp of oil.

  13. Add rice balls and cook for 5-7 minutes turning occasionally and spraying with cooking spray until browned and crisp all over.

  14. Serve warm.
