Rice balls with italian meats and cheese, breaded and deep fried.

Recipe Ingredients for Rice Balls

5 cups rice, cooked, cooled
7 ounces salami
4 ounces pepperoni
8 ounces cheese, mozzerella
8 ounces provolone cheese
1/2 cup breadcrumbs, italian style (more needed for prep)
1/2 cup all-purpose flour (more needed for prep)
1 egg (more needed for prep)
3/4 cup peanut oil (more needed for cooking)

Recipe Directions for Rice Balls

  1. Cook rice according to directions, allow to cool. Set aside.

  2. Dice salami and pepperoni, finely.

  3. Dice both cheeses into 1/8 inch cubes.

  4. Mix rice, cheeses and meats in a large bowl, thoroughly.

  5. Using damp but not wet hands, form balls with the rice, cheese and meat mixture. Make sure the balls are stable enough to hold form once you set them aside on a large cooking sheet or clean prep area. Continue until mixture has been all formed into balls.

  6. In a medium-small bowl, beat egg with about 1/4 cup water for an egg wash. (If more eggs are needed, add up to 1/4 cup water for each and beat well. Adjust calories as needed.)

  7. Place flour in an other bowl, and bread crumbs in an other. (You will need 1-2 cups of each, for caloric values, no more than half a cup would be consumed; this goes for the eggs and oil as well. Adjust calories as needed.)

  8. Create an assembly station: Coat each ball in flour, dip in egg wash and roll in breadcrumbs.

  9. When ready, heat oil in a deep pan over medium-high flame to about 300 to 350 degrees Fahrenheit. A deep fryer may be used. Follow manual instructions and set to 300 - 350 degrees. Deep fry in small batches as your pan or fryer size allows for about 1-2 minutes or until golden brown, stirring occasionaly to prevent uneven frying. If frying pan is not deep enough to cover completely, stir more often or flip and adjust cooking accordingly.

  10. Carefully remove from oil, drain, and allow to cool on a cookie sheet (you may line with paper towels).

  11. Continue in batches until complete.

  12. Serve warm.
