Recipe Ingredients for Rice baked VEG

1000 grams California Basmati
900 grams Onions
1000 grams Carrots
1500 grams Marrow
4000 grams Tomatoes, Red, Ripe
275 grams kefalotiri
80 grams Bouillon

Recipe Directions for Rice baked VEG

Veg must be well minced or shredded. The shredded Onions, carrots and marrows are 'boiled' in open pan along with the chopped tomatoes. Once veg starts becoming soft the bouillon powder is added and mixed in. Cover and simmer over low heat. In meantime start boiling the rie. After 20 min add rice to veg micture and leave simmer for another 20-30 min. Beat eggs and mix with grated kefalotiri. Pout the rice/veg mixture into large baking tray and mix in cheese/egg mixture. Put baking tray in medium hoy oven (180c) and bake for anmhour or so. Leave to cool a bit before serving.
