Vegetarian bread and vegetable soup

Recipe Ingredients for Ribollita

130 grams Onions
100 grams Carrots
2 stalk, medium (7-1/2" - 8" long) Celery
150 grams Kale
14 oz Tomatoes
4 serving(43 g) Round Sourdough Sliced Bread
2 1tsp Olive Oil
1 3/4 cups garbanzo beans

Recipe Directions for Ribollita

  1. Slice the onions, cut the carrots into coins and the celery into similarly sized pieces. Strip any hard stems from the kale and shred coarsely.

  2. Fry the onions in the oil until translucent. Add the carrots and celery and cook until all the vegetables have softened.

  3. Add the tomato, kale and about 4 cups of water. Simmer until kale is tender, about 1 to 1 1/2 hours.

  4. While soup is cooking, toast the bread and rub it with the garlic.

  5. When the kale is done, add the bread and the beans, pushing the bread to the bottom of the pot.

  6. Allow the soup to cool completely.

  7. Reheat, stirring occasionally. The bread will break up but chunks should remain.

  8. Serve, possibly with a thread of olive oil and/or some sliced raw onion on top.
