Recipe Ingredients for Ribollita

92 g
1 T olive oil
2 onions
2 garlic cloves
905 g tomatoes
3 carrots
3 celery stalks
14 oz beef broth
14 oz chicken broth
108 g cannellini
2 t sage
1/4 t pepper
300 g brussel sprouts

Recipe Directions for Ribollita

  1. heat oil of med., saute onions, and garlic - about 5 mins. Stir in tomatoes, carrots, and celery and brussel sprouts. Reduce heat and simmer until celery and carrot are softened - about 10 mins.

  2. Stir in beef and chicken broths, beans, sage and pepper. Bring to a boil. Reduce heat and simmer, stirring frequently until veggies are tender and soup has thickened - about 1 hr.

  3. When reheating you may want to lay down a layer of bread in a dutch oven and cover with soup, then lay down another layer of bread and cover again with soup. Bring to a boil. Reduce heat and simmer until bread is soft - about 10 mins. Sprinkle with sage.
