Tuscan white bean stew with cabbage

Recipe Ingredients for Ribollita di Brendan

200 g of Kale
650 g Savoy Cabbage
500 g of cannellini beans
5 carrots
4 potatoes
3 stalks of celery
1 tbsp of tomato paste
2 tomatoes
1 onion
20 g of salt
55 g of olive oil

Recipe Directions for Ribollita di Brendan

Cook the beans until they're mushy, almost pureed, then put them aside. Put the oil in a big soup pot, chop the onion and throw it in and cook until golden. Chop the tomatoes and thrown them in with the paste. Once a sauce like substance begins to materialize, throw the beans in with their water. Chop all of the vegetables into chunks and toss them in a few minutes later. Add salt and pepper. Cook all of this for about 2.5 hours. Serve over a slice of whole grain bread smeared with garlic (optional).
