Zucchini ribbons, white beans, and grilled polenta

Recipe Ingredients for Ribbon Zucchini with Beans and Grilled Polenta

6 cup, chopped Squash, Summer, Zucchini, Includes Skin
3 tomato Tomatoes, Red, Ripe
1/2 cup, sliced Onions
3 clove Garlic
1/4 cup leaves, whole Basil, Fresh, chopped
1/2 tsp dried oregano
1/4 tsp dried red chili pepper flakes
1 1/2 tbsp Olive Oil
1 tsp Salt, Table
0.13 tsp Pepper, Black
1 1/4 cup Cannellini
6 slices Polenta
5 tbsp Parmesan, Grated Cheese

Recipe Directions for Ribbon Zucchini with Beans and Grilled Polenta

Use a peeling knife to slice zucchini into ribbons, set aside. Cook cored and scored tomatoes in a boiling water for 20 minutes. Let them cool. Peel the skin . Blend tomatoes in a food processor to make sauce. Minced garlic and chop onions. On a medium heated pan, add .5 Tbsp olive oil, add minced garlic and onions. Add red chili flakes. Saute until garlic and onions are soft. Add tomato sauce, chopped basil and oregano. Simmer for 1.5 hours. Add salt and black pepper, set aside Combine zucchini ribbons with .5 Tbsp olive oil. Then, add them to a hot frying pan. Add cannellini beans and saute for 3 minutes until they are hot. Place them on a serving plate. Add the seasoned tomato sauce. Grill polenta slices on .5 Tbsp olive oil on a hot frying pan for 2 minutes, flip, and grill the other side. Serve polenta with the zucchini ribbons, beans, and tomato. Sprinkled with Parmesan cheese.
