Delicious and nutricious - note - the above quantities are for one serving only, when you make it - you need to increase the quantities if you are making it for more than one serving.

Recipe Ingredients for Ribbolita

3/20 tbsp olive oil
1 c chicken broth
1/4 tbsp tomato paste
1/4 c potato, cubed
1/4 c kale, chopped
1/4 c carrot, chopped
3/20 c celery, chopped
3/20 c beans
3/20 c lentils
1/2 clove garlic
1/20 tsp salt
1/4 c onions

Recipe Directions for Ribbolita

  1. Soak beans 4 hr in cold water

  2. Cook beans and lentils separately

  3. In a cast iron pot sautee onions and garlic, and then add all the other ingredients.

  4. When beans and lentills are cooked - puree them and add to the cast iron pot.

  5. Cook until vegetables are tender and season to taste.
