My grandmother always has tons of rhubarb in the summer and bakes this.

Recipe Ingredients for Rhubarb Shortcake

4 cups rhubarb
3/4 cup sugar
3 tbs margarine
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/2 cup milk
1 cup sugar
1 tbs corn starch
1/4 tsp salt
1 cup boiling water

Recipe Directions for Rhubarb Shortcake

  1. Place cut or crushed rhubarb in a greased 8x8 pan.

  2. Cream together 3/4 cup sugar and margarine.

  3. Mix flour, baking powder, and salt.

  4. Add flour mixture and milk to creamed mixture.

  5. Spread over rhubarb.

  6. Combine 1 cup sugar, corn starch, and salt.

  7. Sprinkle over top.

  8. Pout 1 cup boiling water over top (add a few drops a red food dye to water if desired).

  9. Bake at 350C for 1hr. (This will likely boil over the edges of the pan so I place this on a cookie sheet in the oven.)
