Use fresh pulled rhubarb in season or frozen to make a nice alternative to apple sauce for a snack, spread or with meats. Combine with strawberries for additional variety.

Recipe Ingredients for Rhubarb Sauce

12 cups chopped rhubarb
2 cups brown sugar
1/2 cup water

Recipe Directions for Rhubarb Sauce

  1. Combine rhubarb, water and sugar in a large heavy pot and heat over a low flame stirring often until the sugar disolves and the rhubarb is soft and thick.

  2. Adjust amount of water if necessary to avoid sticking remembering too much will make a very thin sauce.

  3. Don't stress over the exact amount of sugar. The rhubarb does cook down. Less is better to start, you can always heat it up and add more if the sauce isn't sweet enough. It's much more difficult to take those extra calories back out.

  4. Serve warm or chilled.
