Recipe Ingredients for Rhubarb Pudding cake

4 cups diced rhubarb
1/2 cup all-purpose flour
1/2 cup oatmeal
3/4 cup splenda
1/3 cup skim milk
3 tablespoons canola oil
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon vanilla extract

TOPPING:
1/4 cup sugar
1/2 cup splenda
1 tablespoon cornstarch
1 cup boiling water
1/2 teaspoon ground cinnamon

Recipe Directions for Rhubarb Pudding cake

  1. Place rhubarb in a greased 8-in. square baking pan.

  2. Pulse oatmeal in food processor till fine.

  3. In a small bowl, mix flour, oatmeal, splenda, skim milk, oil, baking powder, salt and vanilla (mixture will be stiff).

  4. Spread over rhubarb.

  5. For topping, combine sugar, splenda and cornstarch.

  6. Sprinkle over dough. Pour water over all; do not stir. Sprinkle cinnamon on top.

  7. Bake at 350 degrees F for 55-65 minutes or until pudding tests done.
