Delicious! Replace the Rhubarb with any other fruit.

Recipe Ingredients for Rhubarb Muffins

1/3 cup brown sugar (or white)
1/2 teaspoon ground cinnamon
1 tablespoon unsalted butter
1/2 cup chopped walnuts
2 1/2 cups unbleached all-purpose flour (may need 1/4 additional cup)
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 pinch table salt
1 1/3 cups light brown sugar , packed firm
2/3 cup vegetable oil
1 tablespoon grated lemon zest , lime, or orange, (see note above)
1 egg
1 cup buttermilk
2 teaspoons vanilla extract
1 3/4 cups rhubarb, diced
