Recipe Ingredients for rhubarb muffins

1.5 cup, packed Sugars, Brown
0.5 cup Sugars, Granulated
2.5 cup White Flour, Unbleached
1 serving Cultured Lowfat Buttermilk
0.67 cup Olive Oil
1 large Egg, Whole
1 tsp Salt, Table
1 tsp Baking Powder
1 tsp Vanilla Extract
2 tbsp Margarine, 70% Vegetable Oil Spread, Soybean And Soybean(Hydrogenated)
2 cup raw diced Rhubarb
2 tsp Cinnamon, Ground

Recipe Directions for rhubarb muffins

  1. mix dry and wet ingredients separately then mix together (not white sugar, margarine, and 1 tsp cinnamon - keep for topping) and stir in rhubarb and fill into pre greased muffin pans; add topping;

  2. bake at 375 for 18-20 minutes
