Recipe Ingredients for rhubarb muffins

1 1/2 cups wheat flour
1 c white flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups brown sugar
1/2 cup unsweetened applesauce
1 egg
1 teaspoon vanilla extract
1 cup soy milk
2 c diced rhubarb

Recipe Directions for rhubarb muffins

Mix wet and dry ingredients separately. Combine the wet and dry mixes and stir in rhubarb. Bake at 350 for 25 minutes.
