Makes 6 servings



Moist rhubarb muffins made with oat, wheat, and white flour. Also used Splenda in place of some of the sugar. Could add flax seed to make them even more healthy. Adding 1/4 cup milled flax seed adds an additional 20 calories per Texas size muffin.

Recipe Ingredients for Rhubarb Muffins - Low Calorie

4 ounces Lite 85 vanilla yogurt
4 tbsp unsweetened applesauce
1/4 cup Eggbeaters
1/3 cup oat flour
1/3 cup whole wheat flour
2/3 cup white flour
1/2 cup brown sugar
1/4 cup Splenda
1/2 tsp baking soda
1/4 tsp salt
1 cup rhubarb
1/16 cup brown sugar
1/16 cup Splenda
1/2 tsp ground cinnamon

Recipe Directions for Rhubarb Muffins - Low Calorie

  1. Preheat oven to 350 degrees. Spray muffin tin with PAM or use paper liners. Recipe makes 12 regular sized muffins or 6 Texas sized muffins.

  2. In a medium bowl combine yogurt, applesauce and Egg Beaters. Set aside.

  3. In a large bowl stir the flours, sugars, soda, and salt together. Our the wet ingredients into the dry and mix only just just blended. Fold in the rhubarb. Spoon into the prepared muffin tin, filling the cups 2/3 cup full.

  4. In a small bowl combine the remaining brown sugar, Splenda and cinnamon. Spoon over the tops of the muffins and press down lightly

  5. Bake for 18 minutes or until a toothpick comes out clean. Cool in the pan for about 15 minutes before removing.
