Recipe Ingredients for Rhubarb Meringue Custard

1 1/2 cups sugar
3 egg yolks
1/2 cup flour
1/4 cup milk
3/4 tsp. nutmeg
4 cups diced rhubarb
3 egg whites
1/4 tsp. cream of tartar
1/4 cup sugar
1/2 tsp. vanilla

Recipe Directions for Rhubarb Meringue Custard

  1. Divide 4 cups diced pink rhubarb between 8 - 1 cup size ramekins or custard cups.Combine & beat:

  2. 1 cups sugar

  3. 3 egg yolks

  4. cup flour

  5. cup milk

  6. tsp. nutmeg

  7. and spread evenly over rhubarb, a tablespoon at a time. Mixture is thick, but will sink into rhubarb and combine with juices perfectly. Bake 20 min. at 400F, then reduce heat to 350F. & bake another 20 min. Cool slightly, and spread with meringue.

  8. Beat until frothy:

  9. 3 egg whites

  10. Add tsp. cream of tartar & beat until stiff with peaks that lean over slightly when beater is removed. Beat in 1 tbsp at a time:

  11. cup sugar; then add tsp. vanilla. Do not overbeat.

  12. Spread on hot custards, making sure to cover edges well, from edge to centre.

  13. Bake additional 10 to 15 min. until lightly browned.

  14. Cool before serving.

  15. Can also be used as a pie filling for 1 commercial ready to bake crust.
