Recipe Ingredients for Rhubarb low fat muffins

1 1/4 cup brown sugar
1/2 cup unsweetened applesauce
1 egg
2 tsp vanilla
1 cup low fat buttermilk
1 1/2 cups rhubarb
1 cup raspberries
1 1/2 cup whole wheat flour
1 cup all purpose flour
2 tbsp flaxmeal
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt

Recipe Directions for Rhubarb low fat muffins

  1. In a large bowl mix brown sugar, flours, baking sodda, power and salt.

  2. in another bowl, mix applesauce, eggs, vanilla and buttermilk.

  3. Gradually add wet to dry. add rhubarb. fold in raspberries. Don't over mix. sprinkle with streusel topping if desired.

  4. Bake 20 min at 375 F.
