Recipe Ingredients for Rhubarb ice cake / Warm orange compote / kama tulip

3 g Almonds Natural
3 g hazelnuts, grounded
4 g icing sugar
10 g egg yolk
4 g honey
7 g egg white
4 g sugar
10 g egg yolk
15 g sugar
30 g whipped cream
40 g rhubarb
100 g orange
10 g sugar
1 g star anise
4 g cinnamon stick
4 g flour
4 g icing sugar
6 g egg
4 g butter

Recipe Directions for Rhubarb ice cake / Warm orange compote / kama tulip

  1. Rhubarb parfait: mix all biscuit ingredients together and roll 3mm thick disks. Cook them in oven on 170C for 10min. Cook rhubarb with half a quantity of sugar for 15min on low heat. Whisk egg yolk with other half a sugar, mix with rhubarb jam and finally fold in whipped cream. Put the bicuit on the bottom of the metal ring and pour the parfait mix on top. Freeze for minimum of 12 h.

  2. Warm orange compote: on low heat cook the orange juice with spices and sugar for 30 min. Add fruit gel, mix evenly and add orange segments. Cook for 5min and cool down.

  3. Kama tulip: mix all ingredients together. Leave it in fridge for 1 hour. Using spatula and rectangular tulip mould spread dough 1mm thick on baking paper. Dust it with kama powder. Cook in oven for 8min on 180C.
