High cal, low cholestral desert, may use other fruit.

Recipe Ingredients for Rhubarb Crumble

2 cups rhubarb, cooked
1/2 cup sugar
2 cups flour
2 cups brown sugar
1/2 cup margarine
1 cup milk, sour
1 egg
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ginger

Recipe Directions for Rhubarb Crumble

  1. mix chopped rhubarb & sugar with a tad of water, and cook in Microwave for about 7 minutes in 9 X 9 pyrex or corning baking dish

  2. cool for 20 minutes, meanwhile

  3. mix with hands, flour, brown sugar and margarine until it forms crumbles

  4. separate and keep aside 1 cup of this mixture

  5. add soda, and spices,

  6. sour milk with a bit of vinegar, then beat egg into it.

  7. pour milk/egg mixture over dry ingred, and beat lightly

  8. pour mixture over rhubarb, then bake at 375 deg F for 45-50 minutes. test with toothpick

  9. serve hot or cold with cool whip or frozen yogurt.
