Recipe Ingredients for Rhubarb Crumb Cake

100 g butter
100 g fine sugar
2 large eggs
1 tsp vanilla essence
100 g self-raising flour
300 g strawberries
12 g brown sugar
20 g butter
40 g flour
15 g brown sugar

Recipe Directions for Rhubarb Crumb Cake

  1. preheat oven to 190C.

  2. line a 20cm square cake tin with baking paper.

  3. cream the butter and sugar until light and fluffy.

  4. beat in the eggs and vanilla.

  5. fold in the flour.

  6. slice the rhubarb into 2cm pieces and toss in the demerara sugar.

  7. make the crumble topping by rubbing the butter into the flour and stirring in the sugar.

  8. pour the cake mix into the tin and scatter the rhubarb on top.

  9. sprinkle the topping over and bake for 30 minutes.

  10. serves 12
