Great summer dessert for your rhubarb harvest!

Recipe Ingredients for Rhubarb Crisp

3 cup, diced Rhubarb
1 oz Orange Juice
3/4 cup Sugars, Granulated
1/4 tsp Cinnamon, Ground
1/4 cup Butter
1/3 cup, packed Sugars, Brown
2/3 cup Wheat Flour, White, All-purpose, Enriched, Bleached
1/8 tsp Salt, Table
1/4 tsp Baking Soda
2/3 cup dry Old Fashioned Quaker Oats

Recipe Directions for Rhubarb Crisp

  1. Butter 8-inch square baking dish.

  2. Chop rhubarb. Toss in bowl with orange juice, sugar and cinnamon to coat rhubarb.

  3. Place mixture in prepared baking dish. Dot mixture with 1 Tbsp. butter cut up in pieces.

  4. To make "crisp" topping: Combine 1/4 cup melted butter with brown sugar in a bowl.

  5. In seperate bowl, sift together flour, salt and baking soda; then mix in oats.

  6. Combine the oat mixture with the brown sugar mixture making a crumble consistency. Spread over rhubarb in pan.

  7. Bake at 375 degrees for 40 minutes. Serve warm or cold with ice cream, whipped cream or a splash of milk!

  8. * Splenda in place of sugar to reduce calories.
