Hot, tart and sweet, this is a condiment to serve with curries or crackers and cream cheese. Great in a sandwich!

Recipe Ingredients for Rhubarb Chutney

1 pound rhubarb
2 tsp ginger, fresh and coarsely grated
2 garlic cloves, minced
2 jalapeno peppers, seeded, deveined and chopped
1 tsp paprika
1 tbs yellow mustard seeds
1/4 cup raisins
1 cup light brown sugar
1 cups white wine vinegar

Recipe Directions for Rhubarb Chutney

Wash rhubarb and slice into 1/4 inch pieces. Place all ingredients in a non-corroding pot, and bring to boil, lower heat and simmer until reduced to about 1 cup. Stored refrigerated in a glass jar, this chutney will keep for several months.
