for using up grandma's rhubarb sauce

Recipe Ingredients for rhubarb cake

1 cup white flour
1 1/2 cups barley flour
1 cups sugar
1/2 cup brown sugar
1 oz tapioca flour (oz)
1 1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp ginger
1/2 tsp nutmeg
2 eggs

Recipe Directions for rhubarb cake

  1. boil the 1 cup sugar with the rhubarb, 2 cups water and the tapioca flour until it makes a chunky sauce the consistency of applesauce, let cool

  2. mix the remaining dry ingredients together

  3. beat the eggs and add them and the cooled rhubarb sauce to the dry

  4. bake in 13 x 9 pan at 350 F for about 30 minutes until a cake tester comes out clean and the cake is nicely browned
