Muffins--less sweet than found in the stores and very versatile in that you can add all sorts of things.

Recipe Ingredients for Rhonda Pope's muffins

1 1/2 cups white flour
1 cup oatmeal
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup oil
1 egg

Recipe Directions for Rhonda Pope's muffins

  1. mix all ingredients together

  2. Bake 15-18 minutes at 400 degrees

  3. For variety add in blueberries (1 cup) or 1 tbsp jam on top of each or anything else you can think of.

  4. For another variant, replace white flour and oatmeal with 2 cups of wheat flour.
