This is a cold salad that packs in the protein -- great with crackers, tortilla chips, or just by itself. It also makes a great filling for a wrap!

Recipe Ingredients for Revved-Up Southwest Shrimp Salad

8 oz cooked shrimp
1 1/2 oz avocado
2 oz tomato
1 oz onion
1/4 oz jalapeno
2 oz vegetable juice
2 T lime juice
1/8 t salt
1/8 t black pepper
1/8 t fresh cilantro

Recipe Directions for Revved-Up Southwest Shrimp Salad

  1. Steam the (peeled and deveined) shrimp, rinse with cold water, then spread them out on a paper-towel covered plate and put them in the fridge to chill for at least 15 minutes while you prepare the other ingredients.

  2. FInely mince about 4 leaves of fresh cilantro.

  3. Mince the onion and tomato. Use pickled jalapenos, and remove the seeds before mincing (removing the seeds cuts the heat.) Use more or less jalapeno to your taste. Peel and chop avocado to a small dice.

  4. Mix all the vegetables with Spicy Hot V-8, lime juice, cilantro, salt and pepper, then toss with chilled shrimp.

  5. Serve immediately.
