Recipe Ingredients for Revised Chicken, Tomato and Fennel

1/4 cup all-purpose flour
2 eggs, beaten
5/8 c panko bread crumbs
2/3 cup grated Parmesan
2 teaspoons dried basil
1 teaspoon dried thyme
18 oz boneless skinless chicken breasts
1/3 cup canola oil
1 fennel bulb
12 ounces cherry tomatoes
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 clove garlic, minced
1 teaspoon dried thyme
1/2 cup mascarpone cheese

Recipe Directions for Revised Chicken, Tomato and Fennel

Saute chicken. Remove to 175 oven. Saute fennel for 5-6 mins. Add tomatoes, salt, pepper and thyme and saute 5-6 more mins. Serve over chicken breasts.
