Chicken Gumbo revised from Weight Watchers recipe

Recipe Ingredients for Revised Chicken Gumbo

1 pound chicken breast tenders
1 1/2 cups frozen okra
6 tablespoons rice
1 large green bell pepper, chopped
1/2 small yellow onion
29 oz no salt diced tomatoes
2 tablespoons flour
1 teaspoons creole seasoning

Recipe Directions for Revised Chicken Gumbo

  1. Cut chicken into bite sized chunks. Saute in non-stick skillet until 1/2 done. Add garlic {a few cloves diced} and onions. Saute until fragrant and onions start to become translucent.

  2. Add diced peppers and okra. Saute for 2 minutes. Add flour and stir constantly, coating the meat and vegetables. Add tomatoes, creole seasoning and rice; stir well. Cook over medium low heat until rice is tender (15-20 minutes). Stir often as this recipe likes to stick!
