Recipe Ingredients for revised chicken enchiladas

9 oz chicken breast,boneless,skinless,chopped
8 oz fat free refried beans
8 tbsp taco sauce, green
10 tortillas,corn 6"
1 onion, small, chopped
1 1/4 oz taco seasoning
1 jalapeno pepper, diced slices from jar
1 oz green chilies,canned
1 3/4 cup cheese, low fat,shredded

Recipe Directions for revised chicken enchiladas

  1. boil or bake chicken and chop

  2. mix together chicken,beans,onion,taco seasoning,chilies,jalapeno and 1/2 cup cheese

  3. divide evenly onto 10 corn tortillas

  4. roll and place seam side down into baking dish(9 x 13)

  5. spread each tortilla roll with green taco sauce

  6. sprinkle with remaining cheese

  7. pour 19 oz can el paso enchilada sauce over rolls

  8. cover with foil and bake at 350* for 30 minutes

  9. uncover and bake an additional 15 minutes

  10. add el paso mild enchilada sauce to your food log
