took mom's recipe and substitued butter for apple sauce, and sugar for splenda.

Recipe Ingredients for revised banana bread

1/2 cup flour
1/4 cup ground flax seed
2 1/2 tsp baking powder
1/4 tsp baking soda
3/4 tsp salt
1/3 cup apple sauce, unsweetened
2/3 cup splenda brown sugar
1 eggs
1/4 cup egg white
1 cup mashed bananas

Recipe Directions for revised banana bread

  1. mix applesauce, with sugar

  2. add eggs (mix with blender)

  3. add bananas (mixwith blender)

  4. add the rest slowly with the flour (mixture)

  5. bake 350 40 - 50 minutes

  6. or in small loaf pans about 30 minutes, (cupcakes probably 20-30 minutes)

  7. check with toothpick.

  8. spray pans with non stick pam first.

  9. NB: the bananas i usually mash in a bowl with the mixer. if you triple the batch, you may want to add about 1/4 cup steal cut oats instead of more flour (especially if the bananas were frozen first)
