A twist on traditional picadillo, substituting ground turkey and veggies for high-fat sausage. Serve on toast or with baked tortilla chips. Easy to make ahead, freezes well.

Recipe Ingredients for Retooled Picadillo Sandwiches

1/2 lb. ground turkey
1 c chopped onion
1 large zucchini
1 c grated carrot
14 1/2 oz. diced tomatoes
1/2 cup golden raisins
1/4 cup chopped olives
2 tbsp. tomato paste
1 tbsp. balsamic vinegar
1/2 tsp. ground cumin
1/2 tsp. dried oregano, crushed
1/8 tsp. crushed red pepper (optional)
12 slices whole wheat bread, toasted
1/2 cup shredded reduced fat Monterey Jack cheese

Recipe Directions for Retooled Picadillo Sandwiches

  1. Spray a 12-inch nonstick skillet with no calorie olive oil spray (such as PAM) and cook turkey and onion for 10 minutes or until turkey is browned and onion is tender. Stir in zucchini and carrot and cook 5 minutes more.

  2. Stir in undrained tomatoes, raisins, olives, tomato paste, vinegar, cumin, oregano, and crushed red pepper (if using). Bring to boiling; reduce heat.

  3. Simmer, uncovered, for 10 minutes or until sauce is thickened. Divide turkey mixture onto 6 slices of toast. Top with cheese and another slice of toast. Makes 6 sandwiches.
