Basic tomato sauce for zitti, raviolli, and base for meat sauce

Recipe Ingredients for renee's home made tomato sauce

6 tablespoons olive oil
1 large carrot
1 teaspoon anise seeds
1 small onion
2 cloves fresh garlic
1 teaspoon sugar
411 g (1 can 14.5 oz) Stewed Tomatoes, Original Recipe
1588 g (2 cans ) crushed tomatoes
1 tablespoon Paprika
1/3 teaspoon white pepper
1 teaspoon oregano
1 teaspoon basil
1 pinch red pepper

Recipe Directions for renee's home made tomato sauce

  1. Heat oil in 4 quart sauce pan on low heat.

  2. Peel wash and then grate the carrot finely into the oil.

  3. Put in the anise seeds.

  4. Peel and dice the onion extremly small by first cutting it in half from the top to the root end; then slicing it very thin in the same direction as the first cut; holding the slices closley together cut across them as closley as you can manage.

  5. Add to the sauce pot and turn heat up a little.

  6. Crush, slice, mince, or grate the garlic into the pot.

  7. Saute adding a little water if it becomes too dry.

  8. Add the crushed tomatoes straight from the can.

  9. Put the stewed tomatoes into a blender or food processor and blend until everthing is blended.

  10. Pour into put.

  11. Heat through gently stirring often.

  12. Cook longer if desired but sauce is also ready a few minutes after it heat through.
