This is a reinvention recipe I created to finish leftovers from another recipe.

Recipe Ingredients for Reinvented Fish Tostadas

2 serving Stuffed Fish Fillets with Spinach and Cream
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
0.5 cup, sliced Peppers, Sweet, Red
1 cup Spinach
0.25 cup Peas, Green
1 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
1 head Lettuce, Cos Or Romaine
2 oz (Costco) Kirkland Mexican Style Blend Shredded Cheese
0.5 serving Dressing
1 tbsp Sauce, La Victoria, La Victoria Green Taco Sauce, Mild
2 tsp Seasoning Mix
1/4 tsp Chili Powder
1 serving (Birds Eye) The Ultimate Southwest Blend
1 plum tomato Tomatoes, Red, Ripe

Recipe Directions for Reinvented Fish Tostadas

  1. Cook bacon in microwave and set aside.

  2. Cut up all vegetables and put in Pam coated Teflon pan with frozen veggies.

  3. Add fish mixture from recipe.

  4. Add dressing, taco sauce and seasoning.

  5. Mix and cook through until everything hot and cooked.

  6. Serve on Tostadas with your favorite fixings (salsa, sour cream) and enjoy!
